  Hollendon Halibut

 

  • 1/8 pound salt pork, sliced thin
  • 1 onion sliced thin
  • 2 bay leaves
  • 4 tablespoons butter, softened
  • 3 tablespoons flour
  • 1/2 cup fresh bread crumbs
  • 1/2 teaspoon paprika
  • chopped parsley
  • lemon slices
  • salt, freshly ground pepper
  • 2 1 LB Halibut steaks

Preheat oven to 350 F. Place all but three or four slices of salt pork in bottom of shallow baking pan. Cover with onions and bay leaves. Place halibut steaks on top. Season with salt and pepper. Cream together 3 tablespoons of butter and flour and smear over the fish. Cover with remaining salt pork slices. Top with bread crumbs, dot with remaining butter. Cover with foil and bake 40 minutes. Remove foil and bake 10 minutes more until brown. Serve sprinkled with paprika and parsley and lemon slices.
